Ozone in Fresh Meat, Fish & Poultry Preparation & Storage

Compared to current chemical sanitising processes used on these products, ozone stands out in that when used correctly it will not cause damage or change to taint the finished product. It will leave no chemical residue in the process water allowing for easier disposal.

Ozone is approved for use in Australia under Food Standards Australia and New Zealand (FSANZ) Section 1.3.3 allowing it to be used as a processing aid and as an ingredient. It is also permitted as a bleaching agent and as a washing and peeling agent used in the course of food manufacture.

In the USA, it is was granted FDA approval in 1997 as ‘Generally Recognised As Safe’ (GRAS) and later in 2001 was allowed as a food additive in contact with meat and poultry (Title 21 section 173.368).

Ozone can be dissolved in water where it becomes a powerful disinfectant. It is able to kill bacteria, viruses, parasites and fungi more effectively and safer than traditional chemical methods.

As a wash or spray, ozonated water can be used to sanitise surfaces and equipment used in food processing. Utensils and small equipment can be rinsed in ozonated water to remove chemical and bacterial residue.

For example; when used on the preparation tables in direct contact with fish flesh, ozonated water will deliver a finished product with a longer shelf life. (please see download article)

Ozonated water can be used in pressure cleaners to sanitise large surface areas in the processing environment.

Gaseous ozone when used in storage or food preparation areas can provide an effective treatment against airborne and surface organisms. This method of treatment is very cost effective and will lead to an extended shelf life for the product.
